Chicken Divan:
Need:
1 - Family sized can of Cream of Chicken Soup 1 1/2 cup mayonaise 1-2 cups shredded cheddar cheese about 1 1/2 to 2 pounds of boneless skinless chicken breast fillets (I recently tried boneless, skinless chicken breast tenders and since they boil faster they seemed much moister than the fillets but either works) 1 pound frozen Broccoli Spears (can use fresh, but frozen is easier and just as good) 1 tsp lemon juice curry powder
Directions:
Sauce: mix entire can of Cream of Chicken soup, tsp lemon juice, and mayonaise. Add curry powder to taste (I use a few tsp at least I also like to stir in about a cup of the cheddar cheese but you dont have to
Heat oven to 350' Boil chicken breasts (I do it till they are fully cooked or darn near close). drain and slice into strips. Boil broccoli till soft, drain and set aside
Use a 9x13 caserole dish Lay the cooked broccoli spears on the bottom Lay the cooked strips of chicken on top of the broccoli Pour sauce over the top Sprinkle about a cup of cheddar cheese over the top Cover with foil and bake in the oven for 30 minutes.
I also like to sprinkle a little curry powder on the top before cooking for added flavor.
